In the last few weeks I received many messages from different people in Argentina asking me to prepare some Argentine recipe for FMD. Since at the beginning of the year I promised that in 2018 I would make some of the recipes that you ask me, I decided to share a recipe inspired by Argentine cuisine.

Dulce de batata is a traditional dessert from Argentina, Uruguay, and Paraguay, made from sweet potato, in my version I wanted to add squash to make it more original. I have used butternut squash, but you can also use different varieties. It is an easy dessert to prepare, delicious and 100% vegan, and is an excellent way to eat vegetables. I hope you like it 😉

Dulce de batata (sweet potato and squash dessert)

Dulce de batata (sweet potato and squash dessert) Print This
Phase 1 · Phase 3 Serves: 1 - 2 Prep Time: Cooking Time:

Ingredients

  • 1 cup of sweet potato
  • 1 cup of squash
  • 1/4 cup of birch xylitol or stevia to taste
  • 1 vanilla pod
  • 1/2 teaspoon of cinnamon
  • 1 teaspoon agar agar

Instructions

  1. Peel the squash and the sweet potato and cut them into pieces.
  2. Open the vanilla pod with a knife, remove all the seeds and reserve them.
  3. Put the vegetables in a pot with water and with the vanilla pod without seeds. Boil about 25-30 minutes or until the vegetables are tender.
  4. Remove the vanilla pod and mash with a blender or fork.
  5. Put the obtained puree in a pot and add the vanilla seeds, the sweetener you use and the agar agar.
  6. Cook over medium heat, continually stirring until the puree begins to thicken.
  7. Pour the puree into a silicone mold and let it cool for at least 8 hours.

This recipe is suitable for the Fast Metabolism Diet – FMD Phase1 and Phase 3; This recipe only includes vegetables so that you can eat freely during the day. Even so, remember that it is important not to abuse the sweet potato / sweet potato or consume it every day, as Haylie and his team remind us.

The pannacotta is a fresh dessert typical of the Italian tradition. This is my recipe to make a vegan and lighter version of this delicious dessert. To prepare it you only need oat milk, vanilla, a thickener, agar agar and your favorite natural sweetener.

Ingredients

  • For pannacotta:
  • 2 cup of oat milk
  • 2 tablespoons of arrowroot powder or tapioca flour
  • 1/2 vanilla bean or natural vanilla extract
  • 1 teaspoon of powder agar agar
  • 3 tablespoons of birch xylitol or stevia to taste
  • For topping:
  • 2 cup of strawberries (strawberries)
  • 1/2 lemon
  • 2 tablespoons of birch xylitol or stevia to taste

Instructions

  1. Cut the vanilla pod along, and with the knife blade take out all the seeds.
  2. In a pot, put the oat milk, the sweetener, the vanilla seeds, the pod, the arrowroot, and the agar agar.
  3. Put the pot over low heat and continuously stir until it breaks to boil.
  4. Let boil a couple of minutes (without mixing) and remove from heat.
  5. Remove the vanilla pod and distribute the milk in bowls, cups or glasses. Let cool and put in the refrigerator, at least two hours.
  6. Meanwhile, wash the strawberries thoroughly and cut them into small pieces.
  7. In a large bowl, mix the strawberries well with the sweetener and the juice of half a lemon.
  8. Cover and let stand in the fridge.
    When the pannacotta is dense, cover with the strawberries and serve cold.

This recipe is suitable for the Fast Metabolism Diet – FMD Phase 1. With these amounts, you get 2 servings of grains and 2 servings of fruit for <20 pounds.

Easter has arrived and, as always, I propose a super healthy recipe to share with your families in these holidays. The Italian tradition inspires this year’s recipe: as you already know, although I live in Barcelona, I am originally from Rome, where the Easter breakfast is an incredible event. The whole family gathers and eats cheese bread, eggs, artichoke omelet, but the main protagonist is the Colomba, a delicious sweet shaped like a dove and covered with almonds and sugar. The recipe that I propose today is a healthy version of this Italian sweet, I choose muffin molds with Easter decorations, but you can put it in the traditional mold in the form of Colomba or a classic cake mold, as you like it ?

Easter Muffins

Phase 3 Serves: 4 Prep Time: Cooking Time:

Ingredients

  • 1/4 cup of sorghum flour
  • 1/8 cup of tapioca flour
  • 1/8 cup of quinoa flour
  • 1/4 cup of almond meal
  • 1 whole egg
  • 2 egg whites
  • 5 tablespoons of birch xylitol *
  • 6 tablespoons of sunflower oil
  • 1 tablespoon grated orange zest
  • 1/2 vanilla pod
  • 2 tablespoons cacao nibs
  • 1 teaspoon cream of tartar
  • 1 teaspoon baking soda
  • 1/4 cup of whole raw almonds
  • 1/4 cup of almond milk **

Instructions

  1. Preheat the oven to 350ºF (180ºC).
  2. In a large bowl beat the egg with 1 egg white and 4 tablespoons of xylitol until it becomes a foamy compound.
  3. Add the grated orange zest, the vanilla seeds, the sunflower oil, the almond milk and mix well.
  4. In another bowl, mix all the flours, the baking soda and the cream of tartar and add them to the liquid compound. If it is too dry, add a few more tablespoons of almond milk.
  5. Add the cacao nibs and mix well.
  6. Distribute the compound in muffin molds or cake mold.
  7. [OPTIONAL] *** In a small saucepan, melt 1 tablespoon of xylitol, when it entirely melts beat the remaining egg white and add the melt xylitol.
  8. Put a teaspoon of the compound of egg white and xylitol on the surface the most muffins and mix the surface lightly with a fork, to integrate a bit the two compounds.
  9. Garnish with the whole almonds and bake for 20 minutes.****

This recipe is suitable for the Fast Metabolism Diet – FMD Phase3; With these amounts, you get 4 healthy fat servings and 4 grain serving, but just 1 protein serving, for <20 pounds.

The marshmallow is undoubtedly one of the most famous treats in the world and it is also very fun. It has a sweet taste like a candy but its texture is like a cloud. Today I propose my healthy and sugar-free version of this sweet, so that you can surprise your partner with a bag of handmade goodies on Valentine’s Day.

Sugar-free Marshmallow

Phase 2 Serves: 3 - 2 Prep Time: Cooking Time:

Ingredients

  • 3 egg whites
  • 1 tablespoons agar agar powder (not flakes or strings)
  • 1/2 cup of birch xylitol
  • 1/2 vanilla pod
  • 1 tablespoon of arrowroot (optional)
  • 1 cup of water
  • 1 teaspoon cream of tartar

Instructions

  1. In a large bowl, start to whisk the egg whites. Add the cream of tartar. Keep whisking until stiff peaks forms.
  2. With a knife cut the vanilla bean and remove the seeds, add the seeds to the whites and beat again.
  3. Made a sort of syrup: boil the water and agar agar for 3 minutes stirring frequently.
  4. Add xylitol and boil for another 3 minutes stirring constantly over medium-low heat.
  5. While whisking the egg whites add 1 teaspoon of syrup. Pay attention not to disassemble the egg whites. Continue until you finish the water. There must be a white, shiny and sparkling compound.
  6. Optional: Sprinkle the base of a silicone mold with 1/2 tablespoon of arrowroot.
  7. Pour the compound into a silicone mold (or another mold lined with baking paper) and level it with a spatula.
  8. Optional: sprinkle the surface with the remaining arrowroot.
  9. Leave in the refrigerator at least 2 hours.
  10. Demolish carefully and cut into squares.

This recipe is compatible with the Fast Metabolism Diet – FMD Phase 2; With these quantities, you got 3 protein servings for P2 snack for <20 pounds.

Its preparation is really simple and fast, but you have to let it rest for a few hours in the fridge. When we talk about healthy fats, we often forget that seeds are not only part of this group but they are foods rich in Omega-3 and fiber; For this reason, I decided to share this recipe, whose protagonists are the seeds.

Pudding de chía, lino y coco

Phase 3 Serves: 1 Prep Time: Cooking Time:

Ingredients

  • 1/2 cup of coconut milk
  • 1 tablespoon chia seeds
  • 1 tablespoon golden flax seeds
  • 1 vanilla pod
  • 1 teaspoon of birch xylitol

Instructions

  1. Cut the vanilla pod and extract the seeds with a knife (in case of not having vanilla pods can use natural vanilla flavor)
  2. In a bowl mix the coconut milk, vanilla, and xylitol, mix until the xylitol is dissolved perfectly
  3. In a smaller bowl, mix the seeds of chia and flax and add them to the coconut milk
  4. Mix the milk and seeds well and put them in a glass
  5. Store in the refrigerator for at least 3 hours

This recipe is suitable for the Fast Metabolism Diet – FMD Phase 3; With the quantities of this recipe, you got 1 snack for over 20 pounds. For a complete snack add veggies.

This recipe can also be used as breakfast or dessert, but you must add the rest of the food, since this recipe only contains healthy fats.

Oats have been cultivated for a long time. The Irish, the Scots, the Huns, and many other peoples used oats.

Nowadays, this cereal returns to be very popular, mainly among the athletes, by its interesting characteristics; In fact, oats are a whole cereal, rich in vegetable proteins, unsaturated fats and B vitamins.

Today I propose a straightforward way to prepare oat milk very fast.


Oat milk

Phase 1 · Phase 3 Serves: 1 - 2 Prep Time: Cooking Time:

Ingredients

  • 3/4 cup raw oats
  • 3 cups of water
  • 1/2 teaspoon cinnamon (optional)
  • Natural vanilla flavor (optional)
  • 2 teaspoons birch xylitol (optional)

Instructions

  1. Heat 1 cup of water until boiling and remove from heat
  2. Add the oat flakes to the hot water and let stand 30 minutes with a lid
  3. Beat the oats in a blender for 2 minutes
  4. Filter the compound* through a fine mesh strainer or a vegetable milk filter
  5. The milk obtained with this process is very dense, add 2 cups of water to dilute it and cinnamon, vanilla beans and xylitol or stevia to flavor
  6. Shake and store in the refrigerator

This recipe is compatible with the Fast Metabolism Diet – FMD Phase 1 and Phase 3; this recipe use 3/4 cups of raw oats which correspond to 1 serving of grains for >20 pounds in P1 or 2 servings of grains for >20 pounds in P3.

As you may have heard, Starbucks has created a new pink and blue frappuccino, which is triumphing in social networks. The truth is that I am not very fan of these types of chains, since they usually use many sugars and usually are not very healthy, still I have to admit that the photos look very pretty; For this reason I decided to inspire myself in the aesthetics of the Unicorn Frappuccino and prepare a vegan mousse of colors, because eating healthy is important but the unicorns too;)

As always, my version is quite different and much healthier. I have chosen some unusual ingredients to prepare this simple vegan mousse, perfect for both breakfast and snack. The taste is very particular: the rhubarb is a mixture of sweet and sour, while the slight touch of kale offers a very interesting bitter contrast. Now that the heat is on, this recipe is a perfect alternative to a fruit smoothie.

Raw Vegan Unicorn Mousse

Raw Vegan Unicorn Mousse Print This
Phase 2 Serves: 2 Prep Time: Cooking Time:

Ingredients

  • 3 cups fresh rhubarb
  • 170 gr tofu (natural)
  • 2.5 tablespoons birch xylitol
  • Lemon juice
  • Vanilla
  • 1/2 teaspoon kale powder

Instructions

  1. Wash and cut the rhubarb into small pieces
  2. Put the rhubarb in the mixer, join the tofu (to leave to part about 50 gr for the cover), 2 spoonfuls of xylitol and a spoonful of lemon juice, to beat until it is a cream homogeneous and smooth
  3. Put two tablespoons of the compound in a small bowl and join half the kale powder, stir well until it is of an intense green color
  4. Beat the remaining 50 gr of tofu with 1/2 tablespoon of xylitol and the vanilla seeds; Store this compound in the refrigerator for two hours
  5. Put the rhubarb compound in cups or  glasses: a base of rhubarb compound, 1 tablespoon of kale compound, plus rhubarb compound; Store in refrigerator for two hours
  6. Before serving the mousse put the vanilla compound in a pastry bag and decorate the mousse, sprinkle with the remaining kale powder

This recipe is compatible with the Fast Metabolism Diet – FMD Phase 2 ONLY for vegans; With these quantities, you get 2 complete snacks for >20 pounds or 1 complete breakfast for >20 pounds.
