Breakfast is my favorite meal, although it hasn’t always been that way. It took me a while to get used to having breakfast in the morning, and one of the things that have helped me the most has been preparing sweet and healthy recipes.
These cocoa and pear pancakes, for example, are a real vice.
It is one of my favorite breakfasts because it is delicious and delicate as a dessert, it is prepared in just 10 minutes, and it is vegetarian and gluten-free, which is perfect for everyone.
To prepare this wonder, you only need a few easy-to-find ingredients and a good non-stick pan.

Customize your pancakes

I usually eat these pancakes with blueberries on top, but you can give them your personal touch by choosing the fruit you prefer. Raspberries, kiwis, cherries, strawberries, mango, and even tangerines look great. Go ahead and try new combinations.

Phase 1 Serves: 2 - 3 Prep Time: Cooking Time:

Ingredients

  • 3/4 cup of oat flour or buckwheat flour
  • 2 pears
  • 6 egg whites
  • 2 tablespoons raw cacao powder
  • 3 tablespoons birch xylitol or stevia to taste
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon cream of tartar
  • Topping:
  • 2/3 cup blueberries for <20 pounds, or 1 cup for >20 pounds

Instructions

  1. Peel the pears, chop them and grind them with the blender until obtaining a puree.
  2. In a large bowl, add the egg whites and flour and mix well.
  3. When you have a homogeneous mixture, add the pear puree, the cocoa, the sweetener, the bicarbonate, and the tartar cream. Mix well until the ingredients are incorporated, and you get a smooth dough.
  4. Heat a nonstick skillet. When it’s hot, lower the heat a little, pour two tablespoons of the mixture into the pan, and form a round pancake. Let the pancake cook for a few minutes.
  5. When several bubbles have formed on the surface, turn it over with a spatula and cook for a couple more minutes.
  6. Repeat the process until the mixture is finished.
  7. Serve your pancakes with the blueberries on top.

This recipe is compatible with the Fast Metabolism Diet – FMD Phase 1; With these quantities, you get 3 breakfast for <20 pounds or 2 breakfast for >20 pounds.

Phase 1 Serves: 1 Prep Time: Cooking Time:

Ingredients

  • 1 pear
  • ½ cup of raw oatmeal, old-fashioned
  • 1 teaspoon of birch xylitol or Stevia or Monk fruit to taste
  • ¼ cup of cooked beet
  • ½ cup of water

Instructions

  1. Peel the pear and beet and cut them into pieces.
  2. Put the glass of the blender all the ingredients and beat until there is a perfectly homogeneous smoothie.
  3. Prepare the recipe for this smoothie just before taking it.

This recipe is suitable for Phase1 – FMD P1. With these quantities, you get 1 full breakfast for <20 pounds.

This recipe is suitable for Phase1 (tuna filling) and Phase 4 – FMD P1 and P4. With these quantities, you get 2 servings of grains for Phase 1 with a little protein.

The Plum Cake is a sweet with raisins and dried fruit of English origin, mainly used at teatime. Over the years, it has been changing a lot and has become more appropriate for breakfast, introducing ingredients such as yogurt.

The recipe that I propose today is a very special version of the plum cake, not only is vegan and gluten free but it is thought to start the day in the sweetest and healthy way. Thanks to the mixture of pears and Sorghum flour this Plum cake remains sweet and fluffy, ideal for breakfast and much appreciated by adults and children.

Vegan and Gluten-free Plum Cake with Pears

Vegan and Gluten-free Plum Cake with Pears Print This
Phase 1 Serves: 1 Prep Time: Cooking Time:

Ingredients

  • 3/8 cup of sorghum flour
  • 1 and 1/2 ripe pears
  • 1/4 cup of oat milk
  • 1 and 1/2 teaspoons of birch xylitol
  • 1/2 lemon
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon baking soda

Instructions

  1. Preheat the oven to 160º C (320º F) if it is ventilated or 180º C (350º F) if it is static
  2. Peel and cut the pears into small pieces and beat the half until puree and leave the other half to soak in cold water with a few drops of lemon juice, to avoid that it oxidizes
  3. Mix the pear puree with the oat milk and form a homogeneous compound
  4. In a large bowl mix the flour with baking soda, cream of tartar and xylitol
  5. Combine the pear and milk mixture in the flour and mix until a homogeneous compound
  6. Pour the compound into a (small) silicone mold for plum cakes
  7. Drain well the pears in pieces and put them in the top part of the plum cake
  8. Grate lemon peel over pears
  9. Bake for 30/35 minutes

This recipe is compatible with the Fast Metabolism Diet – FMD Phase 1; With these quantities, you get a complete breakfast P1 for >20 pounds.
