I made this smoothie with alkaline vegetables, which are excellent for our body, egg whites powder, which is the source of protein, and spices such as cacao and cinnamon that give us the energy to start the day, an amazing flavor and many other benefits. The Salmon is without a doubt my favorite fish. I like it anyway. Smoked, baked, Sashimi, tartare, battered, marinated, carpaccio, steamed and in all other versions where you can find.

This recipe I propose is a delicate green soup of cabbage and leek, scented with dill, to which a simple skewer of smoked salmon gives an exceptional touch. Dill and salmon are indeed a perfect match.

This recipe is simple to prepare, and it is also perfect for when you have guests and little time to cook 🙂

Ingredients

  • 1 leek
  • 1 cup of green cabbage
  • 1/2 cup kale
  • 1/4 onion
  • 2 cups vegetable stock
  • 50 gr Smoked Salmon
  • 2 teaspoons fresh or dried dill
  • White pepper
  • Salt

Instructions

  1. Remove the stalks of the kale and wash their leaves and the rest of vegetables
  2. Put the vegetables in a pot with the broth and a little salt and cook for about 20/25 minutes on medium heat
  3. Meanwhile cut some strips of smoked salmon and put them on a skewer
  4. A few minutes before finishing the cooking, add the half of the dill and the white pepper
  5. When veggies are cooked, pass them through a blender until a homogeneous cream
  6. Serve the soup in a deep dish with the skewer over and sprinkle both of them with the remaining dill

This recipe is compatible with the Fast Metabolism Diet – FMD Phase2; with these quantities, you get one meal for <20. For a complete meal add more veggies and the remaining protein.

The pancakes are a very typical breakfast in the United States, but they have become very famous all over the world;  this fluffy flour-based dessert is delicious, quick to prepare and can easily be made healthier. It is fantastic with butter and honey, but also with chocolate and fresh fruit.

To create today’s recipe I have been inspired in the Japanese pastry and its very spongy and green pancakes (usually for the matcha); my recipe is a little different, it is caffeine free so I have used kale powder to give it the green color and the bitter touch that the matcha has. It is accompanied very well with the Italian meringue or the rhubarb jam 🙂

  • 3 egg whites
  • 1 tablespoon of arrowroot
  • 1 teaspoon kale powder
  • 1 lime (green)
  • 3 tablespoons birch xylitol
  • 1/2 teaspoon raw cocoa powder (optional)

Instructions

  1. In a large bowl, mix egg whites and xylitol and beat until soft peaks form
  2. Gradually add 1 tablespoon of lime juice to the egg whites, while continuing to whisk until stiff, glossy peaks form when you lift the whisk out of the bowl
  3. In a small bowl, mix the arrowroot with the kale powder and grated lime zest, and add it to the egg whites; Mix gently until uniform
  4. Place a piece of baking paper of the same size in a non-stick frying pan
  5. Pour the foaming compound* onto the oven paper, cover with lid and cook over medium heat, for 20 minutes
  6. Carefully remove pancake from baking paper and serve with Italian meringue** and raw cacao (optional), rhubarb jam or whatever you want

Notes

*For convenience, I have prepared a single large pancake, but it is possible to make several smaller pancakes if desired. - ** If you use Italian meringue, watch the quantities: do not exceed your portion. - WARNING FOR CELIAC: always check that the products that you use are certified without gluten, for who has doubts in this respect can be informed in the following link: http://bit.ly/GlutenFreeSymbolologíaSinGluten

As you may have heard, Starbucks has created a new pink and blue frappuccino, which is triumphing in social networks. The truth is that I am not very fan of these types of chains, since they usually use many sugars and usually are not very healthy, still I have to admit that the photos look very pretty; For this reason I decided to inspire myself in the aesthetics of the Unicorn Frappuccino and prepare a vegan mousse of colors, because eating healthy is important but the unicorns too;)

As always, my version is quite different and much healthier. I have chosen some unusual ingredients to prepare this simple vegan mousse, perfect for both breakfast and snack. The taste is very particular: the rhubarb is a mixture of sweet and sour, while the slight touch of kale offers a very interesting bitter contrast. Now that the heat is on, this recipe is a perfect alternative to a fruit smoothie.

Raw Vegan Unicorn Mousse

Phase 2 Serves: 2 Prep Time: Cooking Time:

Ingredients

  • 3 cups fresh rhubarb
  • 170 gr tofu (natural)
  • 2.5 tablespoons birch xylitol
  • Lemon juice
  • Vanilla
  • 1/2 teaspoon kale powder

Instructions

  1. Wash and cut the rhubarb into small pieces
  2. Put the rhubarb in the mixer, join the tofu (to leave to part about 50 gr for the cover), 2 spoonfuls of xylitol and a spoonful of lemon juice, to beat until it is a cream homogeneous and smooth
  3. Put two tablespoons of the compound in a small bowl and join half the kale powder, stir well until it is of an intense green color
  4. Beat the remaining 50 gr of tofu with 1/2 tablespoon of xylitol and the vanilla seeds; Store this compound in the refrigerator for two hours
  5. Put the rhubarb compound in cups or  glasses: a base of rhubarb compound, 1 tablespoon of kale compound, plus rhubarb compound; Store in refrigerator for two hours
  6. Before serving the mousse put the vanilla compound in a pastry bag and decorate the mousse, sprinkle with the remaining kale powder

This recipe is compatible with the Fast Metabolism Diet – FMD Phase 2 ONLY for vegans; With these quantities, you get 2 complete snacks for >20 pounds or 1 complete breakfast for >20 pounds.

If you liked this recipe do not forget to tell me in a comment 🙂
